From 20yr old Sauvignon Blanc vines planted to 1.9ha on "perruches" (flinty-clay) soils with grasses planted in between. Spontaneous fermentation with indigenous yeasts begins in stainless steel and then is moved to 400L barrels that last between 2-5 months. Aged for 5-7 months in the same barrels. Unfiltered.
